🫑 Air Fryer Stuffed Bell Peppers Recipe
✅ Ingredients (Serves 4):
4 large bell peppers (any color), tops cut off and seeds removed
1/2 lb (225g) ground beef or ground turkey
1 cup cooked rice (white, brown, or quinoa as a sub)
1/2 cup diced onion
2 cloves garlic, minced
1 cup marinara or tomato sauce
1 tsp Italian seasoning
1/2 tsp salt & 1/4 tsp pepper
1/2 cup shredded mozzarella cheese (plus more for topping)
Olive oil spray
👨🍳 Instructions:
1. Prepare the Bell Peppers
Cut off the tops of the bell peppers and remove seeds and membranes.
Lightly spray or rub with oil and set aside.
2. Cook the Filling
In a skillet over medium heat, cook onion until softened (about 3 minutes).
Add garlic and ground meat; cook until browned.
Stir in rice, marinara sauce, Italian seasoning, salt, pepper, and cheese.
Cook 1–2 more minutes until everything is well mixed and heated through.
3. Stuff the Peppers
Spoon the filling into each hollowed bell pepper, packing tightly.
Top each with a little extra shredded cheese.
4. Air Fry
Preheat air fryer to 360°F (182°C).
Place peppers upright in the basket or tray (use foil rings to stabilize if needed).
Air fry at 360°F for 10–15 minutes, or until peppers are tender and cheese is melted and golden.

Add corn, black beans, or chopped spinach to the filling
Swap beef for lentils or plant-based meat for a vegetarian version
Top with fresh parsley or basil after cooking
