🫑 Air Fryer Stuffed Bell Peppers Recipe

Ingredients (Serves 4):

  • 4 large bell peppers (any color), tops cut off and seeds removed

  • 1/2 lb (225g) ground beef or ground turkey

  • 1 cup cooked rice (white, brown, or quinoa as a sub)

  • 1/2 cup diced onion

  • 2 cloves garlic, minced

  • 1 cup marinara or tomato sauce

  • 1 tsp Italian seasoning

  • 1/2 tsp salt & 1/4 tsp pepper

  • 1/2 cup shredded mozzarella cheese (plus more for topping)

  • Olive oil spray

👨‍🍳 Instructions:

1. Prepare the Bell Peppers

  • Cut off the tops of the bell peppers and remove seeds and membranes.

  • Lightly spray or rub with oil and set aside.

2. Cook the Filling

  • In a skillet over medium heat, cook onion until softened (about 3 minutes).

  • Add garlic and ground meat; cook until browned.

  • Stir in rice, marinara sauce, Italian seasoning, salt, pepper, and cheese.

  • Cook 1–2 more minutes until everything is well mixed and heated through.

3. Stuff the Peppers

  • Spoon the filling into each hollowed bell pepper, packing tightly.

  • Top each with a little extra shredded cheese.

4. Air Fry

  • Preheat air fryer to 360°F (182°C).

  • Place peppers upright in the basket or tray (use foil rings to stabilize if needed).

  • Air fry at 360°F for 10–15 minutes, or until peppers are tender and cheese is melted and golden.

🧀 Optional Add-ins & Variations:

  • Add corn, black beans, or chopped spinach to the filling

  • Swap beef for lentils or plant-based meat for a vegetarian version

  • Top with fresh parsley or basil after cooking
