1 large eggplant, sliced into 1/2-inch rounds
2 eggs, beaten
1 cup breadcrumbs (Italian seasoned or plain with herbs added)
1/2 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp salt
Olive oil spray

1 cup marinara sauce
1 cup shredded mozzarella cheese

Step 1: Prep the Eggplant
Slice eggplant and sprinkle both sides with salt.
Let sit for 15–30 minutes to draw out moisture (this prevents sogginess).
Pat dry with paper towels.
Step 2: Bread the Slices
Set up a dredging station:
Bowl 1: Beaten eggs
Bowl 2: Mix breadcrumbs, Parmesan, garlic powder, and salt
Dip each eggplant slice into the egg, then coat in breadcrumb mixture.
Step 3: Air Fry the Eggplant
Preheat air fryer to 375°F (190°C).
Lightly spray the basket and eggplant with olive oil.
Air fry in a single layer (work in batches if needed) for 10–12 minutes, flipping halfway through until golden brown and crispy.
Step 4: Assemble Parmesan Layers
In a baking-safe dish or small foil tray (that fits in your air fryer):
Spread a little marinara on the bottom.

Step 5: Final Air Fry
Return layered dish to the air fryer at 350°F (175°C) for 3–5 minutes – just until the cheese is melted and bubbly.
